A purchase specification turns a Robusta Cambodia buying decision into a repeatable quality standard. It should be short enough to use on every order and detailed enough to prevent disagreement.
Start with identity
Record country, region, producer or supplier, lot code, harvest period, process and intended grade. This prevents an approved sample from becoming detached from the shipment it was supposed to represent.
Add measurable green parameters
Depending on the buyer's program, the specification can cover moisture, defect tolerance, foreign matter, screen distribution, odor, color and packaging condition. If a parameter is not important to the product, do not add it simply because another buyer uses it.
Add sensory acceptance
Describe the target cup in practical language: cleanliness, sweetness, body, aftertaste, absence of undesirable ferment or earthy defects, and the role the coffee must perform in the finished product. Keep a physical reference sample whenever possible.
