Robusta Cambodia: Fine Robusta, Mondulkiri, Growing Conditions, and Quality Evidence
Evidence-led guide to Coffea canephora in Cambodia, with Mondulkiri field research, current production data, Fine Robusta quality context, processing factors, and research gaps.
Cambodia is a small but increasingly visible Coffea canephora origin in Southeast Asia. The strongest evidence comes from Mondulkiri, where peer-reviewed field research has documented Robusta farms around Sen Monorom and provincial authorities have reported expanding cultivation, farmer training, processing investment, and recognition of quality-focused Robusta.
The useful way to understand Robusta Cambodia is not as a new commodity competitor to Vietnam. It is as an emerging origin whose agronomy, post-harvest systems, genetics, and sensory identity are still being documented.
This guide summarizes what is currently supported by research and public data, what Fine Robusta means in this context, and where the evidence is still incomplete.
What does “Robusta Cambodia” mean?
Robusta Cambodia refers to Coffea canephora grown and processed in Cambodia. The term describes species and origin. It does not describe one fixed quality level, flavor profile, processing method, or chemical composition.
That distinction matters because Canephora is genetically diverse and highly responsive to harvest maturity, fermentation, drying, storage, roast, and brewing. Two coffees from the same province can behave very differently if their planting material or post-harvest history differs.
A national origin therefore needs to be described with several layers of evidence: where the coffee is grown, which planting material is used, how the cherries are handled, how the green coffee is prepared, and how the finished coffee performs under standardized sensory evaluation.
Where is Robusta grown in Cambodia?
The best-documented contemporary production area is Mondulkiri in northeastern Cambodia.
A 2021 peer-reviewed study by Ehrenbergerová and colleagues examined three Coffea canephora plantations around Sen Monorom Municipality. The farms were approximately 3, 6, and 9 hectares, with an average elevation near 700 meters above sea level. The study area had an annual mean temperature of 22.9°C and long-term mean annual rainfall of about 2,203 mm.
The researchers described the dominant soil on the study sites as latosol with clayey texture. Coffee was grown both in full sun and in agroforestry systems using fruit and multipurpose shade trees.
These measurements provide direct local evidence. They should not be converted into province-wide constants because only three plantations were studied.
Ratanakiri and other northeastern areas appear in Cambodia’s coffee history and cultivation reports, but the recent research base is much stronger for Mondulkiri. For that reason, OCC treats Mondulkiri as the clearest evidence base rather than assuming every northeastern province has the same production system.
What do current production figures show?
Cambodia remains a small producer by global standards, but recent official reporting shows expansion.
In August 2024, the Mondulkiri provincial agriculture department reported more than 500 hectares of coffee in the province. Of that area, 346 hectares were under harvest, with reported average yield of 2.096 tonnes per hectare. The department also reported that 2023 cultivation covered about 525 hectares and involved 365 farming families.
More recent national figures reported in June 2026, citing Cambodia’s Ministry of Agriculture, Forestry and Fisheries, placed total coffee cultivation at 705 hectares nationwide. Of that, 563 hectares were under harvest, producing 1,333 tonnes at an average reported yield of 2.36 tonnes per hectare.
These figures should not be merged casually. The 2024 numbers are Mondulkiri-specific, while the 2026 figures are national. Planted area, harvested area, fresh cherry, dried coffee, and export-ready green coffee are also different measurements.
The defensible conclusion is that Cambodia’s coffee area is expanding, but the sector remains small enough that farm-level and process-level variation can strongly influence national averages.
Why is Mondulkiri suitable for Coffea canephora?
The 2021 Sen Monorom study gives the strongest local answer.
The average temperature of 22.9°C falls inside commonly cited suitable annual conditions for Coffea canephora. Rainfall above 2,000 mm per year is sufficient to support the crop when drainage and seasonal water distribution are appropriate. The studied farms also sit at an upland elevation that moderates temperature relative to Cambodia’s hotter lowlands.
None of those variables guarantees quality.
Climate defines the environment in which the plant develops. Genetics, shade, nutrition, pruning, flowering, fruit load, maturity, disease pressure, and post-harvest handling determine what happens within that environment.
A statement such as “Mondulkiri’s altitude creates premium Robusta” therefore goes beyond the evidence. Elevation is a useful environmental variable, not a sensory score.
What did the Mondulkiri shade study find?
The 2021 research compared shaded and sunny sections of three Coffea canephora plantations.
The study did not find significant differences between shade and full-sun treatments in coffee bean weight or size, total fruit weight per shrub, the weight of 100 fruits, or measured fruit ripeness under the conditions studied. Soil moisture, however, was generally higher in shaded plots.
This is an important local result because shade in coffee is often discussed through assumptions rather than measurements.
The study does not prove that every shade system produces the same yield. Shade percentage, tree species, root competition, spacing, pruning, soil depth, rainfall, and farm age can change the result. The authors specifically noted that more work is needed to determine suitable shade levels for Robusta.
The evidence supports a narrower conclusion: on those three Mondulkiri farms, shade did not create a measured yield penalty and was associated with higher soil moisture.
Why does agroforestry matter in Mondulkiri?
Agroforestry can change the microclimate around coffee.
Shade trees can reduce direct radiation, alter air and soil temperature, slow evaporation, contribute organic material, stabilize soil, and diversify farm outputs. They can also compete with coffee for light, water, and nutrients if poorly designed.
The Mondulkiri study documented shade systems that included lychee, durian, avocado, banana, cassia, and other trees. Average measured shade on the study plots was in the low-to-mid 40 percent range, although individual areas varied widely.
That diversity is important. “Shade-grown” is not one treatment. A sparse durian canopy and dense banana cover create different environments.
For Cambodia, a stronger research program would compare shade percentage and shade-tree species over multiple years while measuring yield, soil moisture, disease, and sensory quality together.
When is coffee harvested in Mondulkiri?
The 2021 field study reported that growers around Sen Monorom generally associated flowering with March, near the end of the dry season, and harvest with November, at the beginning of the dry period.
This seasonal pattern is agronomically useful because a drier harvest window can support picking and drying. It does not eliminate rain or high-humidity risk during the transition between seasons.
Harvest quality also depends on cherry maturity. In October 2025, WWF-Cambodia, KOFI, and the Mondulkiri provincial agriculture department conducted training in Dak Dam commune focused on sustainable harvesting, reducing post-harvest losses, and improving coffee quality.
The existence of such training is significant because selective maturity control is one of the clearest links between field management and post-harvest quality.
What does Fine Robusta mean?
Fine Robusta is a quality-focused approach to Coffea canephora that evaluates green-coffee preparation and sensory performance rather than treating all Robusta as one commodity category.
Coffee Quality Institute has developed Robusta-specific grading and cupping systems. These include attributes such as Fragrance/Aroma, Flavor, Aftertaste, Salt/Acid balance, Bitter/Sweet balance, Mouthfeel, Balance, Uniformity, Clean Cup, Overall, and defects.
The important point is that Fine Robusta is evaluated at sample or lot level.
A country, province, farm, or variety does not become permanently “Fine” because one sample earned recognition. Every harvest and lot still has to be assessed.
In August 2024, Mondulkiri authorities publicly reported Fine Robusta recognition for locally produced Robusta and used that development as part of efforts to expand farmer training and cultivation.
That recognition is useful evidence that Cambodian Canephora can meet quality-focused evaluation standards. It should not be generalized to all Cambodian Robusta.
Does Cambodia have one Fine Robusta flavor profile?
No.
Current evidence is not sufficient to define one national sensory profile.
Canephora flavor can be influenced by genotype, cherry maturity, fermentation, processing method, drying, green storage, roast, brew method, and sensory protocol. Recent international Canephora research documents a much broader vocabulary than the old stereotype of “strong and bitter,” including cocoa, sweet, fruit, spice, nut, floral, fermented, savory, and other categories.
Cambodia needs a larger local sensory dataset before OCC can responsibly claim that Mondulkiri or Cambodia has a stable signature profile.
The better research question is whether particular descriptors recur across traceable lots and multiple harvest years under standardized evaluation.
What processing methods matter for Cambodian Robusta?
Natural, washed, honey or pulped-natural, and controlled fermentation systems can all be used with Coffea canephora.
The process label alone does not predict quality.
Natural processing dries the seed inside the whole fruit and generally requires substantial drying space and careful moisture control. Washed processing removes the skin and pulp before final drying and places more emphasis on depulping, fermentation, washing, water quality, and wastewater management. Honey or pulped-natural processing leaves some mucilage on the parchment during drying.
A natural-processing facility was inaugurated in Bou Sra commune, Mondulkiri, in February 2024 as part of a sustainable coffee value-chain project involving KOFI, the provincial agriculture department, SNV, and DFCD support. That investment shows that post-harvest infrastructure is becoming part of Cambodia’s coffee-development strategy.
The next research step is not to declare one method best. It is to compare traceable Cambodian lots processed in parallel under controlled conditions.
Why is drying especially important?
Mondulkiri has high annual rainfall and a pronounced wet-to-dry seasonal transition. Coffee harvested near the beginning of the dry season may have a useful drying window, but humidity, intermittent rain, bed depth, airflow, and nighttime rewetting remain relevant risks.
Whole-cherry natural coffee is particularly sensitive because drying takes longer. Deep beds can trap humid air and create uneven drying. Honey coffee can clump when mucilage remains sticky. Washed parchment dries faster but can still develop moisture gradients or overheat under aggressive drying.
For Fine Robusta, a final moisture number is not enough. Uniformity and storage stability matter as well.
Cambodia still lacks a large peer-reviewed dataset linking local drying curves, water activity, weather, and sensory outcomes. That is one of the clearest opportunities for origin-specific research.
How important are genetics?
Very important.
Coffea canephora is genetically diverse. Planting material can differ in yield, maturation timing, drought response, disease tolerance, bean size, caffeine, chlorogenic acids, and sensory potential.
Cambodian development programs have introduced or discussed improved Canephora planting material linked to regional breeding programs. However, the presence of an improved seed or named planting material does not guarantee Fine Robusta quality.
A credible genetics program would track planting material by farm, then measure agronomic performance and cup quality over multiple harvests.
Without that record, national statements about “Cambodian Robusta genetics” remain too broad.
Is Cambodia trying to expand coffee production?
Yes.
Public reporting in 2025 and 2026 shows continued emphasis on training, research, seedlings, processing, and northeast agricultural development.
The October 2025 harvest-training program in Mondulkiri focused on technical skills and post-harvest loss reduction. In March 2026, Cambodian officials identified coffee and cocoa as strategic crops for the northeast and called for stronger technical training, research, climate-resilient seedlings, and agro-processing capacity.
This matters because expansion creates two possible paths.
Cambodia can increase planted area without building a clear quality identity, or it can expand while collecting better farm, process, and sensory data. The second path is slower but creates a stronger evidence base.
What research is still missing?
Several major gaps remain.
Cambodia needs multi-year data on genotype performance, flowering and harvest timing, soil fertility, shade percentage, irrigation and drought response, disease pressure, cherry maturity, processing variables, drying curves, water activity, storage behavior, roast response, and standardized sensory outcomes.
The current local evidence base is uneven. Agronomy around Sen Monorom is better documented than fermentation chemistry or sensory repeatability. Production figures are improving, but definitions and geographic scope differ by report.
A strong Cambodia coffee research program should connect these layers rather than treat them as separate stories.
For example, one traceable lot could record farm elevation, planting material, shade, harvest maturity, process, fermentation temperature, drying conditions, green moisture, roast color, and blind cupping results. Repeating that design over several harvest years would produce much more useful origin knowledge than generic claims about terroir.

What the evidence supports now
Cambodia has a real Coffea canephora sector, with the best-documented activity concentrated in Mondulkiri. Peer-reviewed field work confirms that Robusta is being grown under both shaded and sunny systems around Sen Monorom and provides direct measurements of climate, soil, yield, ripeness, and soil moisture. Provincial and national reporting shows expanding cultivation and growing investment in training and processing.
What the evidence does not support is treating every Cambodian Robusta as Fine Robusta, assigning one national flavor profile, or assuming that altitude, shade, process name, or planting material automatically creates quality.
The strongest future position for Robusta Cambodia is therefore evidence-led: more traceable lots, more controlled local trials, more standardized sensory data, and clearer separation between what has been measured and what remains a hypothesis.
