Why the distinction matters

Two samples can show similar moisture readings but behave differently in storage. Water activity can help quality teams understand relative stability and identify lots that deserve closer monitoring. It is not a replacement for sensory evaluation or good warehouse practice.

Use one method consistently

As with moisture, the value becomes more useful when origin and destination teams use calibrated equipment and repeatable sampling. Buyers should avoid building rigid acceptance rules around numbers they cannot measure consistently.

Combine data with cup performance

A technically tidy lot still has to taste good. Track water activity alongside moisture, storage time, roast behavior and cupping results. Over several shipments, the buyer may identify patterns specific to the Robusta Cambodia supply program.
