Processing affects both physical quality and sensory expression. It can influence the risk of mold, over-fermentation, phenolic or dirty flavors, excessive dryness, uneven moisture, and other defects. It can also change how fruit, sweetness, acidity, body, and fermentation-derived aromas are expressed.
The Specialty Coffee Association’s current Coffee Value Assessment separates physical, descriptive, affective, and extrinsic information.
