For Fine Robusta, drying is one of the most demanding stages because moisture, temperature, airflow, time, weather and layer depth must be controlled together.
Coffee must dry evenly, not just quickly
The objective is to reduce moisture to a safe storage range without creating physical damage or unwanted microbial activity.
If the outside dries much faster than the inside, moisture can become uneven. If the process is too slow, the lot may stay biologically active for too long. If heat is excessive, cup quality can suffer.
Natural process increases the challenge
In natural processing, the coffee seed dries inside the whole fruit. That fruit contains sugar and moisture. Cherries need to be spread appropriately and turned regularly. Rain and overnight humidity need to be managed.
Weather can defeat a good protocol
