Guatemala Antigua Single-Origin Coffee: How to Evaluate Premium Claims

Evidence-first revision: 16 September 2026

The former version of this page described Guatemala Antigua with a large set of precise production, variety, climate, processing, price, MOQ, certification and legal figures and claimed a fixed single-origin price premium. The article did not provide the source chain needed for those numbers. They have been removed.

Antigua is outside Origin Coffee Cambodia (OCC.)'s Cambodia-origin authority. This page is therefore retained as a legacy off-origin buyer-method article: how should a buyer decide whether a premium attached to a named coffee origin is supported by the coffee and transaction?

Define the origin claim

A 'Guatemala Antigua' claim should correspond to a verifiable geographic and commercial origin. The buyer should identify the producer, farm, cooperative, mill or exporter and the lot being offered.

Do not rely on evocative geography alone. Named volcanoes, elevation and regional reputation can provide context, but they do not prove that the specific lot came from the claimed production unit.

The required evidence depends on how precisely the coffee is marketed. A broad regional release and a named-farm micro-lot should not carry the same traceability burden.

Define what 'premium' means

A premium is a difference relative to a reference. The reference might be another Guatemala coffee, a commodity benchmark, the buyer's previous contract, a comparable specialty lot or an internal target.

State the price basis consistently. Farmgate, FOB, landed, wholesale roasted and retail prices cannot be mixed in one comparison.

Identify the date and contract conditions because coffee prices and freight can change. A fixed percentage without a reference price and time period is not meaningful.

Separate origin value from cup quality

A famous origin can carry extrinsic value, but buyers still need to evaluate the actual coffee. Physical preparation and sensory quality should be assessed at lot level.

Record sample identity, roast or cupping preparation, descriptive sensory notes and any formal score used. SCA's current Coffee Value Assessment is useful because it recognizes that descriptive, affective and extrinsic value are related but distinct.

An origin reputation should not compensate for a cup that fails the buyer's intended product.

Verify variety claims

If Bourbon, Typica, Caturra, Pacamara or another variety is part of the product story, ask what evidence supports it. Producer records may be sufficient in many transactions; genetic verification is not a routine expectation for every coffee.

Avoid publishing exact regional variety percentages unless an authoritative, dated dataset exists. Variety composition can vary by farm and change over time.

For commercial copy, 'producer-reported variety' can be more accurate than presenting uncertain information as laboratory-confirmed fact.

Processing claims should be lot-specific

Washed, natural, honey, anaerobic, barrel or other process descriptions should be connected to the relevant lot. Ask for a process summary and, when the process is central to price or marketing, appropriate batch evidence.

Do not invent universal fermentation hours, drying periods, moisture targets or flavor outcomes. Such parameters can be meaningful as records of a specific producer process, not as generic rules for Antigua.

The cup should confirm whether the process creates value for the buyer's application.

Scores and flavor notes need context

A regional average score or 'typical' flavor profile should not be published without an authoritative dataset and method. Even within one origin, lots can vary across producer, harvest, process and roast.

Describe the actual sample instead. Record flavor, aroma, sweetness, acidity, body and finish under stated conditions. If a score is used, identify the protocol.

A buyer should treat flavor notes as observations, not guarantees that every lot from the region will taste the same.

Compare physical preparation

Premium pricing can sometimes reflect sorting, preparation, lot separation or other quality work. Review defects, screen distribution, moisture condition and other relevant fields using a defined method.

Do not assume a particular screen size or physical specification automatically proves premium status. The buyer should understand which attributes matter to its roasting and product strategy.

Physical and sensory evidence should stay linked to the same lot.

Traceability can support premium value

A well-documented lot may carry value for buyers who need origin storytelling, customer transparency or compliance. Define the traceability level and inspect the chain from producer or processing unit to sample and shipment.

More granular data is not always more valuable. Accurate, auditable records are more useful than exaggerated precision.

If certifications are part of the premium claim, verify the exact certificate scope and validity.

Do not fabricate legal requirements

The old article included unsupported legal and testing assertions for export markets. Regulatory requirements should be checked from current official sources or qualified advisers for the destination and transaction.

Origin Coffee Cambodia (OCC.) should not publish legal thresholds, tariffs or compliance instructions on the basis of generic SEO copy. Legal currentness is a separate review category.

If a buyer needs a specific test or certificate, that requirement should be documented in the contract.

MOQ is a supplier term, not an origin rule

There is no universal Antigua MOQ. Lot size, exporter policy, consolidation options and buyer relationship can all affect minimum commercial volume.

Ask the actual supplier. Educational content should not convert one seller's practice into a regional standard.

The same applies to payment terms, lead times and sample policy.

Compare the premium with product economics

A buyer evaluating a premium should model what the coffee does in the final product. For a retail bag, consider expected selling price, roast loss, packaging, channel margin and realistic sell-through. For a café, consider beverage usage and whether the origin story or cup difference changes customer value.

This does not mean every purchase needs a complex financial model. It means the premium should be judged against the buyer's own use case rather than a generic claim that a famous origin is always worth more.

If the coffee replaces another lot, compare the alternatives using the same cost basis.

Check repeatability before building a permanent SKU

A one-time lot can be excellent but unsuitable for a year-round program. Ask whether the producer or supplier expects a comparable lot next crop, how replacement coffees are selected and which product attributes are most likely to vary.

For seasonal releases, variability can be part of the appeal. For a permanent wholesale or hospitality SKU, the buyer may need a broader sensory tolerance and a documented replacement process.

Do not turn one successful purchase into a guarantee about future harvests.

Compare the premium with evidence strength

Two lots can have similar cups but different evidence depth. One may have a verified producer, process records, repeat purchase history and stable sample-to-shipment continuity; another may rely mainly on a regional name. Buyers who value traceability may rationally price those offers differently.

The important point is to identify which part of the premium is linked to sensory performance, which part is linked to extrinsic value, and which part is simply seller positioning. The buyer does not need to assign a universal value to each component.

A stronger evidence package can justify confidence without proving that every customer will pay more.

Document why the decision was made

After approving or rejecting the lot, record the decision basis. A short note can state the comparison coffee, sensory result, physical preparation, traceability, intended product and commercial rationale.

This record is useful when a future harvest is offered. The buyer can see whether the premium changed because the coffee changed, the market changed or the product strategy changed.

Decision records also prevent later marketing copy from overstating what the procurement team actually verified.

Premium audit workflow

Before accepting a single-origin premium, record:

• exact lot and seller;
• origin and traceability level;
• sample identity;
• physical assessment;
• sensory assessment;
• process evidence;
• variety information and its source;
• certifications if relevant;
• transaction price and price basis;
• comparison reference;
• contract date and volume;
• product economics for the intended use;
• replacement-lot plan where continuity matters;
• evidence strength behind the origin story;
• any services or logistics included.

Only then calculate the premium.

Ask whether the premium creates value for the product

A premium can be justified commercially if the coffee supports a differentiated retail product, a distinctive sensory profile, a customer story, better traceability or another buyer objective. But value depends on the buyer.

A coffee can be excellent and still be too expensive for one program. Another buyer may consider the same coffee attractive because the origin and cup fit a higher-value release.

The purpose of the audit is not to declare the premium right or wrong; it is to make the comparison explicit.

Origin Coffee Cambodia (OCC.) evidence boundary

Any future Antigua production, variety, process, score, certification, price or legal statistic must be linked to a current, authoritative or primary source and the correct scope.

Sources and further reading
