How Sorting Improves Coffee Quality: From Cherry Selection to Green Grading

Coffee sorting improves consistency by removing material that does not belong in the target lot: underripe or damaged cherries, foreign matter, low-density material, discolored beans, and defined physical defects. Sorting cannot create quality from poor harvesting or processing, but it can protect good coffee by reducing defect risk and making the commercial lot more representative of the sample a buyer approved.
