How to Cup Fine Robusta: A Practical Sensory Evaluation Guide
A practical, research-led guide to Fine Robusta cupping using CQI standards, covering sample preparation, coffee-to-water ratio, water temperature, Robusta-specific scoring attributes, defects, repeatability, sensory vocabulary, and the distinction between quality score and flavor description.
Fine Robusta cupping is a standardized way to compare Coffea canephora samples under controlled preparation and sensory conditions. The goal is not to brew the most enjoyable cup for one person. The goal is to reduce preparation differences so that fragrance, flavor, aftertaste, salt–acid balance, bitter–sweet balance, mouthfeel, balance, uniformity, clean cup, defects, and overall quality can be evaluated consistently.
The Coffee Quality Institute developed Fine Robusta standards with the Uganda Coffee Development Authority specifically because Canephora should not simply be forced into an Arabica evaluation framework.
What is Fine Robusta cupping?
Cupping is a comparative sensory method.
Coffee samples are roasted to an evaluation level, ground to a standardized particle range, dosed at a defined coffee-to-water ratio, infused with controlled water, and tasted as they cool. Multiple cups of the same sample are used so that uniformity and defects can be detected rather than hidden inside one cup.
CQI's current Q Robusta training continues to teach evaluation according to established Fine Robusta standards and the Fine Robusta cupping form. Certified graders are trained in cupping protocols, olfactory and gustatory skills, green and roasted grading, organic acids, triangulation, processing evaluation, and defect recognition.
The purpose is repeatability and shared language.
Why does Robusta use its own cupping form?
Because Coffea canephora has a different sensory and chemical baseline from Coffea arabica.
Canephora generally contains more caffeine and chlorogenic-acid related compounds and often produces greater bitterness, body, and crema. Yet high-quality Canephora can also show fruit, sweetness, cocoa, spice, floral character, and balanced acidity.
The CQI/UCDA form therefore evaluates salt–acid and bitter–sweet relationships explicitly rather than assuming Arabica's sensory balance.
A 2025 Scientific Reports study used the CQI Robusta protocol while building a new Canephora flavor wheel from 67 samples across 13 origins. The study confirms that standardized Robusta quality assessment can coexist with a much richer descriptive vocabulary.
What ratio should be used?
The 2019 Fine Robusta Standards and Protocols specify 8.75 ± 0.25 g of whole-bean coffee for 150 mL of water.
If vessel volume changes, the standard provides an equivalent ratio of about 0.058 g of coffee per mL of water.
The point of this ratio is not that 8.75 g produces the universally best beverage. It is that every sample should be compared at the same brewing strength.
Changing dose from cup to cup changes extraction and intensity and weakens the sensory comparison.
What water temperature should be used?
The Fine Robusta protocol specifies water near 93.5°C, with a stated tolerance of approximately ±1.5°C, at the time of pouring.
That is a cupping standard, not a claim that every Robusta brewing method should use exactly this temperature.
Water temperature changes extraction rate. Using significantly cooler water for one sample and hotter water for another can create differences that came from preparation rather than green-coffee quality.
For comparative cupping, control matters more than preference.
What kind of water should be used?
Neutral, consistent water suitable for sensory evaluation.
The Fine Robusta protocol references SCA brewing-water requirements. Excessively hard, soft, alkaline, chlorinated, or strongly mineralized water can change extraction and flavor perception.
The most important practical rule is consistency across samples.
If a lab changes its water source, filtration, or mineral recipe, it should record that change because historical scores may no longer be directly comparable.
What cups should be used?
Identical cupping vessels.
CQI specifies tempered glass or ceramic vessels within a defined size range. What matters operationally is that all cups in a session have the same volume, dimensions, and material so heat loss and extraction conditions are comparable.
Mixed cup sizes create different thermal curves and can change how quickly samples cool.
Since coffee flavor perception changes with temperature, vessel inconsistency becomes sensory inconsistency.
How many cups should be prepared per sample?
Enough replicates to test uniformity and identify defects.
Fine Robusta quality evaluation is not based on one lucky spoonful. Multiple cups reveal whether a lot is consistent or whether one cup contains a defect that another does not.
This is particularly important for natural-processed coffee or lots with imperfect sorting, where one defective bean can affect an individual cup.
A lab should keep the number of cups consistent across samples.
How should the sample be roasted?
To a standardized sample-roast condition rather than a commercial flavor target.
The purpose is to develop the coffee sufficiently for evaluation without letting a dark roast dominate the sensory result. The Fine Robusta standard includes roast guidance and sample-roast control.
Research on Canephora shows why this matters. Roast level significantly changes chlorogenic acids, volatile compounds, bitterness, and sensory profile. If one sample is roasted light and another dark, the panel is no longer comparing green-coffee quality alone.
Record roast time, color, mass loss if available, and post-roast age.
Why should roast age be controlled?
Because freshly roasted coffee degasses rapidly and aroma changes during storage.
CO2 affects extraction, aroma release, and crema. A sample cupped very fresh and another several days older may not behave identically.
Quality protocols therefore standardize timing between sample roasting and cupping.
For research or internal quality work, the important principle is to use the same timing across all samples in one comparison.
When should coffee be ground?
Shortly before water is added.
Grinding greatly accelerates both gas release and aroma loss. A 2017 degassing study showed that ground coffee releases retained gas far more rapidly than whole beans.
If one sample sits ground for 30 minutes while another is ground immediately before cupping, fragrance and extraction conditions differ.
A good lab organizes grinding sequence so every cup has a similar delay between grinding and infusion.
What should be evaluated first?
Dry fragrance.
Smell the freshly ground coffee before water is added. Record both quality and descriptive notes.
After water is poured, evaluate wet aroma as the crust forms and again during crust breaking.
Fragrance and aroma are not simply pleasant-smell scores. They help reveal roast character, fruit, cocoa, spice, fermentation, green/vegetative notes, phenolic taints, mold, and other signals before tasting.
What is crust breaking?
After infusion, floating grounds form a crust on the surface. The cupper breaks that crust with a spoon, releasing concentrated aroma from the brew.
The action should be consistent across cups.
Aggressive stirring of one cup and a gentle break of another can change extraction and aroma release.
After breaking, floating grounds and foam are skimmed so the beverage can be tasted cleanly.
Why is coffee tasted while cooling?
Because sensory perception changes with temperature.
Very hot coffee suppresses some flavor distinctions and increases the risk of thermal discomfort. As the cup cools, sweetness, acidity, bitterness, defects, and specific aroma notes can become easier to identify.
A coffee that seems simple when hot may become more expressive later. A defect may also emerge more clearly at lower temperature.
Cupping is therefore a sequence of evaluations, not one sip.
What attributes are scored in the CQI Robusta protocol?
The CQI/UCDA protocol evaluates Fragrance/Aroma, Flavor, Aftertaste, Salt/Acid aspect ratio, Bitter/Sweet aspect ratio, Mouthfeel, Balance, Uniformity, Clean Cup, and Overall, with defects separately recorded.
The 2025 Canephora flavor-wheel study used this protocol and describes the same structure.
The key idea is that Canephora quality is not reduced to “how bitter is it?”
A high-quality sample should be evaluated as a complete sensory system.
What is the Salt/Acid aspect ratio?
It assesses the relationship between salinity and desirable acidity.
Saltiness is generally treated as negative in the Fine Robusta quality framework, while positive acidity can contribute brightness and structure when balanced with sweetness and flavor.
This does not mean Fine Robusta should taste like high-acid Arabica.
The question is whether the cup's acid structure is positive and whether salinity interferes with it.
What is the Bitter/Sweet aspect ratio?
It evaluates the balance between bitterness and sweetness.
Canephora naturally contains compounds that can contribute substantial bitterness. Fine quality is not defined by eliminating all bitterness. The aim is a pleasant relationship in which bitterness is controlled and sweetness is perceptible.
Roast level can distort this ratio, which is another reason sample-roast standardization matters.
What is mouthfeel?
Mouthfeel describes tactile perception rather than aroma.
Canephora often has substantial body and texture. The cup can feel creamy, dense, round, dry, rough, thin, silky, or astringent depending on coffee and preparation.
The 2025 flavor-wheel project retained the CQI quality attributes while separately collecting flavor descriptors, reinforcing the value of distinguishing tactile assessment from aroma description.
What is Clean Cup?
Clean Cup evaluates whether the sample is free from interfering defects.
A coffee can be intense and unusual without being defective. Fermented fruit, spice, umami, or savory character must be distinguished from mold, phenolic taint, rotten fermentation, chemical contamination, and other off-flavors.
Training matters because a grader's learned vocabulary can influence what they notice.
The 2025 flavor-wheel research even found differences between exporting and importing graders in the use and intensity of some descriptors, showing that sensory evaluation is standardized but not culturally neutral.
What is Uniformity?
Uniformity asks whether replicate cups of the same sample taste consistently alike.
A lot can have good average flavor but still lose quality if one cup contains a strong defect.
This is especially relevant when defect distribution is sparse. One moldy or black bean may not appear in every cup.
Multiple-cup evaluation is therefore a form of sampling quality control.
What counts as a defect?
A defect is a negative sensory event significant enough to reduce quality.
CQI distinguishes defect intensity on the cupping form and separately uses green grading to count physical defects before sensory evaluation.
Physical and sensory defects are related but not identical. An insect-damaged bean may or may not create a dramatic cup defect depending on severity and concentration, while a chemical or mold taint can be sensorially severe at very low concentration.
The grader should report what is actually perceived.
How is the total score used?
The current CQI database explains that Q coffees are evaluated by three certified graders on a 100-point system and that 80 points or above is the threshold used for Q certification.
For Fine Robusta research, the 2024 DRC genetic-resource study likewise used the Fine Robusta protocol and treated scores of 80 or above as high-quality/Fine within its evaluation.
A total score is useful for classification and comparison.
It does not describe flavor by itself.
Two coffees can both score 83 and taste completely different.
Why are flavor descriptors separate from quality score?
Because description and quality answer different questions.
Quality score asks how good the cup is within the evaluation framework. Descriptors ask what the cup tastes and smells like.
The 2024 DRC study found scores from 75.75 to 84.75 across 70 genotypes and substantial sensory variation even within genetic groups. Nutty/Cocoa was common, but some high-scoring genotypes were strongly Fruity, Sweet, Spicy, or Sour/Fermented.
The 2025 global Canephora wheel expanded that vocabulary to 103 descriptors.
A serious cupping report should preserve both score and description.
Should the Arabica flavor wheel be used for Robusta?
It can help, but it is no longer the only option.
The 2025 Scientific Reports Canephora wheel was created because the standard coffee flavor wheel did not capture all sensory terms frequently used for Robusta. The new wheel includes broad categories such as roasted, sweet, fruity, cocoa, spices, fermented, green/vegetative, umami, salty, animalic, woody, papery/moldy, chemical, and burnt.
This gives Canephora a more species-relevant descriptive language.
How can bias be reduced?
Blind sample coding, consistent preparation, calibrated graders, randomized order, replicate cups, and separation of descriptive notes from commercial identity.
CQI's official database rules emphasize objectivity and require graders to have no ownership or interest in coffees they formally evaluate.
For internal research, the same principle applies. Knowing that one sample is expensive, famous, or from a preferred origin can influence perception.
Blind comparison is stronger evidence.
What should OCC record in a cupping dataset?
Sample code, species, genotype if known, origin, farm, harvest, processing, green moisture, water activity if available, defects, roast profile, roast color, roast date, cupping date, water chemistry, ratio, grind setting, cup count, individual attribute scores, total score, defect notes, and descriptive vocabulary.
Do not average away the individual cup results too early.
Variance can reveal inconsistency that the mean hides.
What would a useful Cambodia cupping program look like?
Use the CQI Fine Robusta protocol as the base and build a longitudinal Mondulkiri dataset.
The same lots could be cupped across harvest years, processing methods, farms, and planting materials. Independent graders should record both formal attributes and Canephora-specific descriptors.
This would allow Cambodia to identify recurring sensory patterns rather than relying on isolated competition scores.
The authority value comes from repeated data, not from one high score.

Sensory scoring is still a human measurement. Grader culture, training, fatigue, expectation, and vocabulary can affect results.
The strongest evaluation combines standardized preparation, trained graders, blind coding, multiple cups, and transparent reporting of variation.
How to build a defensible Fine Robusta cupping record
Fine Robusta cupping is a controlled comparison system.
Use the same roast standard, coffee-to-water ratio, water, vessels, grind timing, infusion method, and evaluation sequence for every sample. Score Robusta-specific quality attributes, record defects, and preserve descriptive notes separately from the total score.
A score classifies quality. A sensory description explains the coffee.
