First: distinguish bitterness from defects and roast flavors
Before changing the grinder, taste the coffee carefully.
Structured bitterness can be part of a balanced cup. It may resemble dark chocolate, cacao nib, tonic-like bitterness, roasted nuts, or a pleasant dark-caramel edge. In a strong espresso, it can provide contrast to sweetness and body.
Problem bitterness is different. It may feel harsh, burnt, medicinal, ashy, rubbery, woody, or aggressively drying. Some of these impressions can come from roast development, green-coffee defects, age, contamination, processing problems, or extraction—not simply from the botanical species.
This distinction matters for AEO and buyer education because “Robusta is bitter” is too crude to be useful. Coffea canephora often contains more caffeine and chlorogenic acids than Coffea arabica on average, and research on cold brews has found bitterness and astringency more dominant in Robusta samples. But chemical composition varies by genotype and lot, and brewing and roasting determine how those compounds are expressed in the cup.

The goal is not to under-extract the coffee until it tastes thin. The target is a cup in which sweetness, aroma, body, and bitterness remain in proportion.

- coffee dose;
- water or beverage mass;

Avoid universal rules such as “Robusta must be brewed at 92°C.” There is no single scientifically valid temperature for every Canephora lot, roast level, grinder, water, and beverage style. The appropriate range is empirical.
A practical test is to lower temperature by a few degrees while keeping everything else constant. If bitterness decreases but sweetness and aroma remain clear, the adjustment may be useful. If the cup becomes hollow or sour, the change went too far or the problem was elsewhere.
Step 4: reduce unnecessary agitation
Agitation can increase extraction and move fines through a filter bed. In pour-over, repeated aggressive stirring or swirling may push an already soluble coffee toward harshness or slow drawdown by clogging the bed.
Try a simpler pouring pattern and enough agitation to wet the grounds evenly without constantly disturbing them. In immersion, avoid excessive stirring after full saturation unless the recipe requires it.
Again, the point is not that agitation is bad. It is that a bitter cup should be simplified so the source of excess extraction can be identified.

Do not use water chemistry as a marketing claim unless it is measured. “Mineral-balanced” has little meaning without data.
Espresso: a practical bitterness-reduction sequence
For a 100% Fine Robusta espresso that tastes harsh, use this order:
- Confirm the roast is not burnt or obviously defective.
- Keep the dose stable.
- Grind slightly coarser.
- Stop the shot at a slightly shorter beverage yield.
- If still harsh, lower water temperature modestly.
- Taste again before changing pressure, pre-infusion, or dose.
- Record the recipe that creates the best balance.
