At minimum, producers need practical systems for cherry intake, flotation or sorting, depulping where relevant, fermentation control, drying surfaces or dryers, moisture measurement, storage, and lot labeling.
More equipment does not automatically create better coffee. Process discipline, cleanliness, maintenance, staff training, and record keeping are equally important.
For emerging origins, shared processing facilities can help small farmers access quality systems that would be expensive to build individually.
Buyer takeaway: when qualifying a supplier, ask how the coffee physically moves through the facility. Infrastructure claims are meaningful only when they translate into repeatable quality and clean lot separation.
