Crema, however, is not a quality score. Freshness, roast, gas content, pressure, dose, grind, and extraction all affect its appearance.
Fine Robusta can provide crema together with cleaner flavor and better sweetness than low-grade commodity canephora. That makes it useful when a roaster wants espresso structure without relying only on dark roasting.
Arabica may contribute more aromatic complexity or acidity depending on the lot, while Fine Robusta can contribute body, intensity, and crema.
Buyer takeaway: choose species and blend percentages for the desired cup, not for crema alone. A beautiful crema cannot compensate for poor flavor.
