Cambodia Coffee Harvest Season: When Cherries Ripen and Why Timing Matters
A research-led guide to Cambodia's coffee harvest season, focusing on Mondulkiri phenology, cherry maturity, selective harvesting, climate timing, harvest labor, and post-harvest quality.
The best-documented Robusta harvest in Cambodia begins around November in Mondulkiri, near the start of the dry season. A 2021 peer-reviewed field study of three Coffea canephora plantations around Sen Monorom reported flowering generally occurring in March and harvest beginning in November. Researchers measured yield in November and December 2017.
That gives Cambodia a useful local reference, not a fixed national harvest calendar. Flowering events, rainfall, planting material, elevation, shade, and farm management can all shift the actual picking window.
For Fine Robusta, harvest quality depends less on the date printed on a calendar than on the maturity and condition of the cherries entering processing.
When is coffee harvested in Mondulkiri?
Published local evidence points to November as the beginning of the main Robusta harvest around Sen Monorom.
Ehrenbergerová and colleagues studied three Canephora plantations of roughly 3, 6, and 9 hectares. Growers interviewed for the research said flowering usually occurs around March, at the end of the dry season, and harvest begins in November as the next dry season starts. The research team measured coffee yield during November and December 2017.
Recent local activity is consistent with that timing. In October 2025, WWF-Cambodia, KOFI, and the Mondulkiri Department of Agriculture completed harvest-focused training in Dak Dam commune. The program addressed harvesting technique and reduction of post-harvest losses shortly before the main harvest period.
The most defensible summary is therefore that Mondulkiri’s principal Robusta harvest generally begins around November and can continue through December or later depending on the farm and season.
The evidence is not sufficient to assign one exact harvest month to all Cambodian coffee regions.
Why does harvest begin near the dry season?
The timing begins months earlier with flowering.
In the Sen Monorom study, the dry season extended from late November 2017 to mid-March 2018, followed by a long rainy period. Growers reported flowering around March. Coffee physiology research helps explain why this transition matters: a period of water deficit can condition dormant flower buds, while renewed water can trigger flowering.
Ronchi and DaMatta’s 2025 review of flowering synchronization and fruit maturation examines this mechanism in detail. Much of the underlying evidence comes from Brazilian Arabica systems, with Robusta discussed more briefly. It is useful for understanding the mechanism, but it should not be converted into a Mondulkiri-specific flowering prescription.
The practical implication is that uneven flowering can later create uneven fruit maturity. One block can therefore require several harvest passes rather than one picking date.
Is November the harvest month for every farm?
No.
Even trees in the same field can carry fruit at different stages because flowering is rarely perfectly synchronized. Rainfall timing can create multiple flowering events, which then produce several ripening waves.
Genetics adds another source of variation. Coffea canephora planting material can differ in maturation cycle. Cambodia is now using improved Canephora material in some development programs, including TRS1 and other Vietnam-linked breeding material. Public farm-level records are not detailed enough to show how much these materials differ in harvest timing under Mondulkiri conditions.
Until those records exist, a province-wide calendar should be treated as a broad planning reference rather than a precise phenological rule.
What does a ripe Robusta cherry look like?
For red-fruited material, mature cherries are generally fully developed and red to dark red rather than hard green. Color is useful, but it is not a complete maturity test because different genetic materials can finish at different shades.
A 2026 Foods study in Hainan, China selected fully ripe Coffea canephora cherries with bright-red to dark-red pulp, uniform development, and no mechanical damage, mold, or insect infestation. Unripe, overripe, floating, and damaged material was removed before the experiment.
That study was not conducted in Cambodia. Its value is methodological: controlled Robusta processing research begins by defining the maturity and physical condition of the fruit.
For local field practice, visual color should be combined with fruit development and knowledge of the specific planting material.
Why does cherry maturity affect quality?
Coffee seeds continue changing physically and chemically as the fruit matures. Harvesting too early can alter bean size, composition, roast behavior, and later sensory performance.
A 2023 study of Coffea canephora from Lampung, Indonesia compared harvest stages and soaking treatments. Selectively harvested ripe material produced the highest bean size and weight in the untreated comparison, and the researchers measured differences in phytochemical composition among treatments.
The experiment does not prove that every ripe-picked Robusta will produce a higher cupping score. Harvest stage and soaking were both experimental variables. It does show that maturity changes the raw material before drying and roasting.
A separate 2019 Food Chemistry study found significantly lower sensory scores for fully immature cherries than for more mature stages. That work used Caturra and Catimor in Colombia, not Canephora, so it should be treated as broader coffee-maturity evidence rather than direct proof for Cambodian Robusta.
Taken together, the research supports a modest conclusion: fully immature fruit is not equivalent to mature fruit.
Does every cherry need to be the same shade of red?
No.
Research does not support the idea that one exact color value defines quality across all genetics and locations.
The 2019 maturity study found its largest sensory separation between fully immature green cherries and later maturity stages. Differences among partially mature, mature, and overripe stages were smaller in that particular experiment.
For Fine Robusta, the more practical objective is to reduce clearly immature, damaged, diseased, ground-contact, or uncontrolled over-fermented fruit while keeping the lot traceable.
A color target is useful only when it reflects the known behavior of the planting material being harvested.
What is selective harvesting?
Selective harvesting means choosing cherries according to maturity instead of removing all fruit from a branch in one pass.
The method may require several visits to the same block. It increases labor but can reduce the amount of immature or overripe material reaching the processing station.
Strip-picking is faster and can still be followed by sorting. The difference is where the sorting burden occurs: in the field or after harvest.
For Fine Robusta research, the key variable is not whether a farm uses one named harvesting style. It is the actual maturity distribution at intake.
The October 2025 Dak Dam training is relevant because it focused specifically on harvesting technique, post-harvest loss reduction, and bean quality.
How large is the current Mondulkiri harvest system?
Public figures show a relatively small but expanding production base, and every number needs a date.
In November 2023, the Mondulkiri Provincial Department of Agriculture reported about 365 households and one company cultivating roughly 525 hectares of coffee. In August 2024, provincial figures said more than 500 hectares were under coffee, with 346 hectares being harvested at an average yield of 2.096 tonnes per hectare.
Those statistics are not interchangeable with newer national totals. Planted area, harvested area, fresh cherry, dried coffee, and green coffee can describe different stages of the production system.
OCC should therefore preserve the year, geography, and unit each time a production figure is used.
Why can peak harvest create a quality problem?
Good cherry can lose quality if the processing system cannot handle peak intake.
Freshly harvested fruit continues respiring and changing. If cherry sits in deep piles or waits too long before sorting and processing, heat and uncontrolled fermentation can develop. Lots may also be mixed simply because the receiving station runs out of space.
Natural processing creates an additional capacity constraint because whole fruit occupies drying space for an extended period.
As production expands, the relevant infrastructure is not limited to depulpers or tanks. Labor, intake sorting, drying area, rain protection, moisture measurement, storage, and lot separation all need to scale with peak daily volume.
How quickly should cherries be processed?
There is no universal number that applies to every process and climate.
The appropriate interval depends on whether cherries will be depulped, washed, dried whole, or moved into a controlled fermentation system. Ambient temperature, transport time, container depth, and cherry condition also matter.
The defensible operating principle is to avoid unnecessary delay and to plan harvest as part of one continuous post-harvest workflow.
A picking team should not be considered separately from transport, intake sorting, fermentation capacity, drying space, and lot identification.
Does shade delay ripening in Mondulkiri?
The best local study did not find a significant shade-related delay in the three plantations it examined.
Ehrenbergerová and colleagues compared shaded and sunny sections and reported no significant effect of shade on measured fruit ripeness, bean size, bean weight, fruit weight, or yield per shrub. Soil moisture was generally higher under shade.
The sample was small: three plantations around Sen Monorom, each with its own shade trees and management. The result should therefore be described as a local field finding rather than a universal rule for all Canephora systems.
It is particularly important not to convert “no significant effect in this study” into “shade never affects ripening.”
How can climate variability affect harvest timing?
Through flowering, fruit development, drought, heat, and rainfall distribution.
If dry-season stress or the first major rains shift, flowering can become less synchronized. Multiple flowering events can then create multiple harvest waves.
Coffee ecophysiology research identifies drought and supra-optimal temperature as important stresses for both Arabica and Canephora. The mechanism is well documented globally, but Cambodia lacks a long-term public phenology dataset showing that Mondulkiri’s harvest has already shifted by a specific number of days or weeks.
That distinction matters. A plausible mechanism is not the same as a measured local trend.
What records would improve Cambodia’s harvest evidence?
A harvest date alone is not enough.
A useful farm dataset would include flowering dates, first picking, peak picking, final picking, block identity, planting material, percentage of ripe cherry at intake, rainfall events, transport time, processing start, process method, drying start and finish, final moisture, water activity where available, and later sensory results.
Repeated over several seasons, those records could answer questions that public data cannot yet resolve. Do certain blocks ripen earlier? Does one planting material produce a narrower harvest window? Do late-season lots behave differently in fermentation or drying?
That is the level of evidence needed to move from a general harvest calendar to a local phenology model.

International research helps explain why cherry maturity, flowering synchronization, and selective harvesting matter, but those studies use different species, genotypes, and production systems.
Cambodia’s next research step is longitudinal field data linking flowering, ripening, harvest passes, processing, and cup quality across several seasons.
