Fine Robusta grading is not a premium adjective attached to a country, a processing name, or a price. It is a documented way to decide whether a lot is suitable for a defined use. Before a buyer judges the cup, the lot should already have an identity, a sampling record, a physical description, and a clear statement of what the evidence does and does not prove.

For Cambodian coffee, including lots from Mondulkiri, this distinction matters. A developing origin does not need exaggerated claims to earn attention. It needs a buyer to see how a conclusion was reached, what can be repeated, and which parts of the claim still require verification. The practical question is not simply, “Is this Fine Robusta?” It is, “Which quality evidence supports this lot, under which method, on what date, and for which service?”

What Fine Robusta grading actually covers

The word grading can describe several different activities:

These activities are connected, but they are not interchangeable. A clean physical sample is not automatically a good cup. A pleasant cup does not prove a complete traceability record. A historical score does not certify a current shipment. A producer’s process description is not independent verification.

The buyer should therefore keep at least three decisions separate: what was observed in the green coffee, what happened in a controlled sensory test, and whether the lot fits the intended menu or wholesale program.

Start with a lot identity

A grading record is only useful when it is attached to a specific lot. Record the supplier or producer group, country, province, community or farm area, species, harvest period, process, lot code, sample date, and storage or delivery status. State the origin level precisely. “Cambodia,” “Mondulkiri,” a district, a cooperative, and a named farm do not communicate the same claim.

A sample code should connect the pre-shipment sample, approval sample, retained sample, and delivered coffee. If the code changes, the record should explain why. If several producers or harvest windows are blended, say so. If a lot is a commercial blend rather than a single origin lot, grade the blend that the buyer will actually receive.

This is especially important when a coffee is described as Fine Robusta, Robusta, or Canephora. These terms may describe species, market positioning, or a quality program, but they do not replace a lot-level record. Use the narrowest statement that current evidence supports.

Physical checks before cupping

Before roasting, inspect the sample and record the method used. A buyer may check:

• Packaging condition, lot code, odor, and visible signs of storage stress.
• Moisture information and, where available, the instrument, calibration approach, and measurement date.
• Screen distribution or bean size distribution, with the screen method and sample size.
• Visible defects and foreign material, with the classification or counting method.
• Color, uniformity, density, and other physical observations when the measurement method is stated.
• Presence of quakers or roast-related concerns after sample roasting.
• Whether the submitted sample is representative of the lot offered.

The point is not to collect impressive numbers. The point is to make observations comparable. A moisture value without an instrument or date is difficult to interpret. A screen result without a method can create false precision. A defect count without a stated protocol cannot be compared confidently with another count.

Do not fill an unavailable field with an assumption. Mark it as not measured, pending, or reported by supplier. A transparent gap is more useful than a borrowed number that later becomes a purchasing error.

Grading is not the same as scoring

A grade describes a set of observations against a defined framework. A score or preference statement describes a sensory or commercial judgment. They may appear in the same buying workflow, but they should remain visibly separate.

A useful report has separate sections for:

1. Green coffee observations.
2. Sample preparation and roast conditions.
3. Descriptive sensory observations.
4. Affective or market-fit judgment.
5. Traceability and process evidence.
6. Open questions, risk controls, and approval status.

This structure avoids a common shortcut: combining every positive signal into one label such as premium, specialty, or high grade. If a lot has clean physical preparation but a narrow espresso window, write both facts. If the cup is attractive but the process documentation is incomplete, mark the purchase as promising or provisional rather than implying full verification.

A sensory descriptor should also be tied to the method. Cocoa, spice, dried fruit, earthy, woody, smoky, or fermented notes may be useful observations, but they are not guarantees of performance in every brew method. If a descriptor appears only in a particular roast or extraction, record that limitation.

Control the sample preparation

The sample must be prepared in a way that another qualified evaluator can understand. Record the roast intent, roast date, sample rest, batch size, roast color or development reference where used, grinder, water, dose, ratio, temperature, steep time, and tasting window. The objective is not to pretend that every buyer can reproduce a cup exactly. It is to preserve enough context to explain why the conclusion was reached.

Use the same preparation when comparing an offered lot with an approved lot or internal reference. A change in roast, water, grinder alignment, or ratio can create a difference that belongs to preparation rather than the coffee. When the purpose is espresso, include a production-style test. When the purpose is filter, include the intended filter method. A coffee can pass one use case and fail another without either result being dishonest.

Use repeatable sensory evidence

Treat historical CQI information correctly

Many buyers still encounter historical CQI or Q Robusta records, older forms, and references to earlier green-grading systems. These materials can be valuable for understanding how a sample was evaluated at the time. They should be dated and identified as historical when they are used in a current buying decision.

The older historical CQI and Q Robusta grading reference can support background research. It should not be used as a substitute for a current lot inspection. A historical result may represent a different harvest, sample, storage condition, protocol, or evaluator. Copying the old result onto a new offer turns context into a false certificate.

Verify process without grading the label

Processing information helps a buyer understand how a result may have been produced. Ask how cherries were selected, depulped or dried, fermented where relevant, turned, sorted, stored, and protected from contamination. Record which statements are measured, which are producer-reported, and which are still unverified.

A process name is not a quality grade. Natural, washed, honey, co-fermented, or another label must be connected to a real process record and a sensory outcome. A process that performs well at small scale may behave differently at commercial scale. Ask what the producer can repeat, what equipment is available, and what happens when weather or labor conditions change.

Traceability is evidence, not decoration

Traceability supports a defensible grade when it is connected to the actual sample. Record producer group, collection area, harvest period, process, storage, and custody where available. Request supporting documents that match the lot code. If the origin is aggregated, say at what level.

A Cambodia or Mondulkiri origin statement can be meaningful context, but it does not imply one uniform flavor, farming system, climate, or grade. Traceability also does not automatically prove fair payment, certification, environmental performance, or climate resilience. Those are separate claims requiring separate evidence. In particular, a quality grade cannot prove that Robusta is drought-proof or that a coffee will remain stable under future weather conditions. Grade for the intended use

The right acceptance range depends on the service. An espresso bar may need body, crema behavior, extraction tolerance, and repeatability across staff shifts. A roaster may accept a narrower window if the lot is intended for a featured release.

Write the intended use before the final decision. Then state what passed, what needs adjustment, and what remains unknown. A lot can be acceptable for milk drinks but not for a delicate filter menu. It can be excellent for a limited release but too variable for a national wholesale program. This is not inconsistency; it is fit-for-purpose grading.

Use an acceptance range rather than promising impossible sameness. The supplier may specify an expected profile, sample approval process, brewing guidance, retained sample, and substitute plan. At delivery, repeat the checks that matter to the contract. If the coffee varies, record whether the likely cause is harvest, processing, storage, transport, roast, or brew preparation.

Connect quality work to producer economics

Selective picking, sorting, drying control, testing, and record keeping require labor, equipment, and time. Ask who pays for that work and when. A buyer-facing grade should not imply that every premium is farmer income unless the payment evidence supports that statement.

Feedback is most useful when it returns to the producer group in practical language. Identify the observed issue, the stage to investigate, and the next sample to compare. The goal is a more repeatable process and a more durable relationship, not a label that punishes a producer for one imperfect sample.

A transparent grading record can help a buyer distinguish the cost of physical preparation, process control, traceability, logistics, and service. Keep those value components visible. Quality communication becomes stronger when the commercial story does not outrun the evidence.

A buyer worksheet that works

A simple grading worksheet can include:

• Lot code and sample date.
• Species, origin level, producer or group, and harvest period.
• Process and process evidence.
• Packaging, storage, odor, and visible condition.
• Moisture, screen, density, defects, and the method for each check.
• Roast and brew conditions.
• Descriptive sensory observations.
• Affective or market-fit judgment.
• Intended use and approved recipe.
• Traceability documents and open questions.
• Delivery verification date and variance from the approved sample.
• Decision owner, review date, and status: approved, provisional, hold, or reject.
