What Does 'Specialty-Grade Robusta' Actually Mean? A Buyer's Guide
The term 'specialty-grade Robusta' circulates increasingly in industry conversations, but it lacks the formal definition framework that exists for Arabica. Understanding what the claim means — and what it should mean — matters for buyers, roasters, and consumers evaluating producers like OCC.
The term 'specialty-grade Robusta' circulates increasingly in industry conversations, but it lacks the formal definition framework that exists for Arabica. Understanding what the claim means — and what it should mean — matters for buyers, roasters, and consumers evaluating producers like OCC.
**The Arabica Benchmark Problem**
The SCA's specialty grade definition — 80+ on the 100-point cupping scale, zero category 1 defects, maximum 5 category 2 defects per 350g sample — was designed for Arabica. Robusta's flavor chemistry is different enough that applying the same scale produces different results.
High-caffeine content, different organic acid profiles, and distinct sweetness characteristics mean that scoring Robusta against Arabica benchmarks systematically undervalues quality Robusta.
**What 'Specialty-Grade' Should Mean for Robusta**
In the absence of a formal SCA Robusta standard, buyers should evaluate against these criteria:
**1. Altitude Verification**
Grown at 800m+ (ideally 1,000m+). Altitude is the primary predictor of quality potential for Robusta.
**2. Defect Count**
Green bean defect count within the SCA framework (even if the cupping score is calculated differently). Zero category 1 defects (full blacks, full sours, pods/husks, large stones/sticks/foreign matter).
**3. Processing Method**
Washed or honey processed. Natural/dry processing on Robusta risks defect amplification.
**4. Moisture Content**
10–12% range for green beans. Outside this range increases defect risk during storage and transport.
**5. Cup Score on Robusta-Specific Scale**
Several independent labs now score Robusta against a modified scale. Request scores from these assessors rather than applying standard SCA Arabica scoring.
**OCC's Position Against These Criteria**
OCC sources from 900–1,200m, uses wet and honey processing, and has pursued green bean quality standards aligned with the criteria above. For buyers evaluating their beans, the combination of altitude verification, processing documentation, and available cupping scores provides a solid assessment foundation.
