How to Brew Cambodian Fine Robusta: Ratio, Temperature, Grind, and Extraction

That distinction matters. There is no credible evidence that all Robusta should be brewed cooler, coarser, stronger, or darker than Arabica. Brewing is a system. Ratio sets concentration potential. Grind changes surface area and flow. Temperature changes extraction kinetics. Contact time and agitation affect how evenly water works through the grounds. Roast, water chemistry, grinder quality, and green-coffee quality set additional limits.
For Cambodian Fine Robusta, the goal is not to “fix” the species. It is to find a recipe that makes sweetness, body, aroma, and finish readable without letting harshness or dryness dominate.
What is the best starting recipe for Cambodian Fine Robusta?
For filter and immersion brewing, start around 60–65 g of coffee per litre of water, roughly 1:15.5 to 1:16.7. The Specialty Coffee Association has used 60 g/L as a common brewing-ratio reference in its technical discussion of water and extraction. That is a useful orientation point, not a universal quality law.
A simple home recipe is:
- 15 g coffee
- 240 g water
- 90–94°C water for a medium roast
- method-appropriate grind
- clean water without obvious chlorine or extreme mineral character
From there, adjust by taste.

The numbers above are recipes, not certification criteria. There is no published evidence showing that one ratio or one temperature is optimal for every Cambodian Canephora lot.
Does Fine Robusta need lower water temperature?
No. Species alone is not a reason to prescribe lower temperature.
A widely cited UC Davis study by Batali, Ristenpart, and Guinard tested drip coffee at 87°C, 90°C, and 93°C. When brew strength and extraction yield were held comparable by changing grind and brew time, temperature had little independent effect on the measured sensory profile within that range.
The study used washed Arabica from Honduras, not Cambodian Canephora. It should therefore not be used to claim that temperature “does not matter” for every coffee. Its more useful lesson is that temperature is only one part of the extraction system.
For a medium-roasted Cambodian Fine Robusta, OCC uses 90–94°C as a practical first test. If the cup is roasty, dry, or harsh, lower temperature by a few degrees and taste again. If it is thin, hollow, or difficult to extract, hotter water may help, but so might a finer grind or longer contact time.
Do not solve every bitter cup by lowering the kettle temperature. Bitterness can come from roast degree, green-coffee composition, processing, storage, high beverage strength, uneven extraction, or a combination of these.
What matters more than temperature?
Strength and extraction deserve more attention than many home recipes give them.
Research by Frost, Ristenpart, and Guinard mapped how brew strength, extraction yield, and roast level change the sensory profile of drip coffee. Later consumer work by Cotter and colleagues found that people did not converge on one narrow “ideal” region. Different consumer clusters preferred different combinations of strength and extraction.
A 2023 paper by Guinard and colleagues integrated this work into updated Brewing Control Charts and argued for a more nuanced view than the old idea of one universally ideal extraction zone.
For practical brewing, that means two cups can use the same temperature and still taste very different because the strength and extraction are different.
If you do not measure TDS with a refractometer, you can still use taste diagnostically.
Too concentrated but otherwise clean: add water or use more brewing water next time.
Thin and hollow: increase extraction or concentration, depending on the sensation.
Dry and rough: reduce extraction pressure on the system by going slightly coarser, shortening contact time, lowering agitation, or lowering temperature.
Both sharp and bitter: suspect uneven extraction before assuming the coffee is simultaneously “under” and “over” extracted as a whole.
Does Robusta need a coarser grind than Arabica?
No. Grind should match the brewing method and the behavior of the coffee bed.
A V60 still needs a filter-style grind. Espresso still requires a fine grind. French press needs substantially coarser particles than espresso. The species name does not replace those physical requirements.
What matters is how the grind affects flow and uniformity.
For pour over, if water stalls and the finish becomes drying, move slightly coarser. If the water runs rapidly and the cup is weak or short, move finer.
For espresso, “finer is always more extraction” is not reliable. Cameron and colleagues combined mathematical modelling with experiments and found that very fine grinding can create inhomogeneous flow through the coffee bed. In their experiments, extraction yield eventually fell again at very fine settings, consistent with uneven flow and poor reproducibility.
That finding is useful well beyond espresso. More surface area is only helpful if water can still move through the bed in a reasonably even way.
How should balanced Fine Robusta taste?
Balanced does not mean bitterness disappears.
Coffea canephora has a different chemical and sensory landscape from Arabica, and brewing method can reveal those differences. A 2022 Food Research International study comparing Arabica and Robusta cold brews found Robusta samples showed stronger dominance of bitterness and astringent sensation, alongside higher caffeine and total chlorogenic acids in the tested material.
That study does not prove every Robusta tastes more bitter. It used specific coffees and cold-brew conditions. Roast, genetics, processing, freshness, preparation, and sensory context all matter.
The newer Canephora-specific sensory literature also shows why “strong and bitter” is too narrow a vocabulary. Fine Canephora can present broad roasted, sweet, fruity, cocoa, spice, floral, fermented, vegetal, and other descriptors depending on the coffee.
Cambodia should be treated the same way: describe the actual lot rather than assigning a national flavor profile before the data exists.
Does Cambodia actually have high-quality Robusta to brew this way?
Yes, at least at the level of specific documented lots.
Coffee Quality Institute’s public database lists Q Certified Robusta Sample 364913 from Cambodia at 86.00 points. The record identifies MALLIKA, producer Oung Vuch Chhe, Paul Coffee & Roastery Lab, the 2024/2025 harvest, Natural / Dry processing, MALLIKA Lot #1994, 30 bags of 30 kg, and certification expiring 3 September 2026.
That record demonstrates that a particular Cambodian Robusta lot achieved a high historical Q Robusta evaluation result.
It does not establish that 1:16, 92°C, V60, espresso, or any other recipe is uniquely correct for that lot. A quality certificate is not a brew recipe.
The correct approach is to start from a controlled baseline and dial the coffee in.
How do you fix a bitter Cambodian Fine Robusta brew?
First ask whether the bitterness is actually unpleasant.
Cocoa-like, roasted-nut, dark-chocolate, or tonic-like bitterness can be part of a coherent cup. The more useful warning signs are persistent dryness, ashiness, rough woodiness, burnt character, or a finish that overwhelms sweetness and aroma.
If the cup is harsh, change only one variable:
- Grind slightly coarser.
- Reduce contact time.
- Lower water temperature by 2–3°C.
- Use a little more water for the same coffee dose.
- Reduce aggressive agitation.
Rebrew before changing a second variable.
If several reasonable recipes remain harsh, look upstream. Brewing cannot erase an overly dark roast, severe staling, physical defects, poor drying, contamination, or a problematic fermentation.
What if the coffee tastes thin, hollow, or short?
Separate concentration from extraction.
A coffee can be weak because there is too much water relative to coffee, even if extraction from the grounds was adequate. It can also be weak because the grounds were not extracted enough.
If the cup is clean but watery, increase the coffee dose slightly or reduce brew water.
If it is grassy, sharp, hollow, or disappears quickly, try extracting more. Grind slightly finer, extend contact time, raise temperature, or improve saturation.
For filter brewing, hold dose and water constant first and adjust grind. It is easier to learn from one controlled variable than from simultaneously changing ratio, pour pattern, temperature, and agitation.
Can Cambodian Fine Robusta work as pour over?
Yes, if the lot and roast have enough clarity.
The assumption that Robusta belongs only in espresso, instant coffee, or dark blends is not a brewing rule. Pour over simply exposes the coffee with less concentration and can make both good processing and defects easier to notice.
For a V60-style brewer, OCC starts with:
- 15 g coffee
- 240 g water
- 90–94°C
- medium-fine grind
- enough bloom water to wet the bed fully
- controlled pours with limited unnecessary agitation
If the cup is dense but blurred, go slightly coarser or use more water. If it is thin and sharp, go finer before automatically increasing the dose.
How should Fine Robusta be brewed in a moka pot?
Use a grind finer than filter but generally coarser than espresso. Fill the basket level and do not tamp it like an espresso puck.
Keep the rim clean so the pot seals correctly. Control the stove heat so the brew emerges steadily rather than violently. Some brewers start with hot water in the lower chamber to shorten the time the assembled pot sits over the stove; this is a technique choice, not a Robusta requirement.
Remove or cool the pot when the flow turns pale and starts approaching the sputtering stage. Long, aggressive final flow can make a dark or already bitter coffee taste rougher.
What should I do with espresso?
Start with a beverage ratio near 1:2 and treat it as a baseline, not a target you must defend.
For example, 18 g of dry coffee yielding about 36 g of espresso gives a beverage ratio of 2. SCA technical writing uses this distinction between brewing ratio for filter coffee and beverage ratio for espresso because the two are not the same calculation.
Then adjust based on flavor, flow, and repeatability.
If the shot is harsh and inconsistent, do not assume grinding finer is the answer. The espresso research noted above shows that overly fine grinding can worsen flow uniformity.
A slightly coarser, faster, more repeatable shot can outperform a slower shot that channels.
Why water quality matters
Coffee is mostly water, and dissolved minerals affect both extraction chemistry and perceived acidity.
Research by Hendon and colleagues showed that dissolved cations such as magnesium and calcium interact differently with coffee compounds during extraction. SCA technical discussion also emphasizes alkalinity because it buffers coffee acids and changes how acidity is perceived.
That does not justify one magic mineral recipe for Cambodian Robusta.
For everyday brewing, use water that is clean, pleasant to drink, and free from obvious chlorine or extreme hardness. If the same coffee behaves strangely across several well-controlled recipes, test another water source before deciding the beans are the problem.
This is especially relevant when brewing in different Cambodian cities or with different bottled and filtered waters. The water can change while the bag of coffee stays the same.
A practical dialing order
When opening a new Cambodian Fine Robusta, use a stable sequence:
- Choose a reasonable ratio.
- Fix the dose and water amount.
- Adjust grind until the extraction is close.
- Use temperature for smaller corrections.
- Change agitation or pour structure only if flow behavior requires it.
- Change the ratio if the coffee is simply too concentrated or too dilute.
Write down what changed.
This is slower than copying a viral “perfect Robusta recipe,” but it creates knowledge you can repeat.
