Fine Robusta Brew Ratio: Starting Recipes for Filter, Immersion, and Espresso
For Fine Robusta, start around 1:16 for filter or immersion and around 1:2 beverage ratio for espresso, then change ratio only when concentration is the problem. These are practical starting points, not species-specific standards. Strength and extraction are related but different, so ratio should not be used to fix every bitter or thin cup.
For Fine Robusta, start around 1:16 for filter or immersion coffee. That means one gram of coffee for every 16 grams of brewing water. For espresso, start around a 1:2 beverage ratio, such as 18 g of dry coffee producing 36 g of espresso. These are practical starting coordinates, not official species-specific standards.
Ratio controls concentration. It does not tell you by itself whether extraction is good. A brew can be strong and under-extracted, or weaker and highly extracted. That distinction is the most useful thing to understand before changing a Fine Robusta recipe.
What does coffee brew ratio mean?
For filter and immersion brewing, brew ratio is the relationship between dry coffee and the water used to brew it.
At 1:16:
- 15 g coffee uses 240 g water
- 20 g coffee uses 320 g water
- 30 g coffee uses 480 g water
Coffee professionals also express this as grams per litre. The Specialty Coffee Association has used 60 g/L as a common reference in technical discussion of brewing ratio. Sixty grams per litre is about 1:16.7.
Espresso is normally described differently. Baristas commonly use beverage ratio, comparing dry dose with the espresso that reaches the cup. An 18 g dose yielding 36 g of beverage is a 1:2 beverage ratio.
Keeping those definitions separate avoids a common mistake: 1:2 espresso does not mean only two grams of brewing water were used for every gram of ground coffee.
What ratio should you start with for Fine Robusta?
OCC uses the following ranges as practical starting points:

These are not Fine Robusta certification criteria and they are not research-proven optima for all Coffea canephora. Roast, processing, grinder, water, equipment, and preference can move the useful ratio in either direction.
The reason to start near the middle is diagnostic. A moderate recipe makes it easier to decide whether the next change should be ratio, grind, temperature, time, or agitation.
Does Fine Robusta need more water than Arabica?
No general evidence supports a rule that Robusta must always be brewed weaker.
Some brewers prefer more water with a particular Canephora because the cup feels dense, roasty, or bitter at their normal ratio. That is a legitimate sensory adjustment, but it is a response to that coffee rather than a biological law.
If 1:16 tastes clean but simply too concentrated, move toward 1:16.5 or 1:17.
If the cup is harsh and drying, adding water may make the beverage less intense, but it may not correct the extraction problem that created the harshness. Try changing grind, contact time, agitation, or temperature instead.
This is the central distinction:
Ratio changes concentration.
Grind, time, temperature, flow, and agitation change extraction behavior.
They interact, but they are not interchangeable.
Why strength and extraction are not the same thing
Coffee brewing science usually separates brew strength, often measured as total dissolved solids or TDS, from extraction yield, the proportion of soluble material removed from the dry grounds.
Frost, Ristenpart, and Guinard systematically varied TDS and extraction yield in drip coffee and found that sensory attributes changed across both dimensions. Cotter and colleagues then found that consumers themselves did not share one narrow preferred region. Different groups preferred different combinations of strength and extraction.
In 2023, Guinard and colleagues combined recent sensory and consumer work into updated Brewing Control Charts. Their results challenged the simplistic idea that one small rectangle on a chart is ideal for everyone.
That matters for Fine Robusta because a strong cup should not automatically be described as over-extracted, and a weak cup should not automatically be described as under-extracted.
A high dose with coarse grind can produce a concentrated beverage with incomplete extraction.
A low dose with long contact can produce a comparatively dilute beverage with substantial extraction.
Taste the two dimensions separately.
What ratio is best for pour-over Fine Robusta?
Start near 1:16.
For a V60 or similar cone brewer, a useful first test is:
- 15 g coffee
- 240 g water
- method-appropriate medium-fine grind
- stable temperature and pouring pattern
Do not change ratio and grind at the same time on the first adjustment.
If the cup is clean but too heavy, move toward 1:16.5 or 1:17.
If it is clean but too light, move toward 1:15.5.
If it is bitter and drying, changing concentration may disguise the problem without fixing it. Test a coarser grind, less agitation, shorter contact time, or slightly lower temperature first.
If it is sharp, hollow, and short, improve extraction before assuming the brew simply needs more coffee.
What ratio works for French press Fine Robusta?
Start between 1:15 and 1:17.
A simple baseline is 20 g coffee with 320 g water, which is 1:16.
French press is an immersion method, so the brew is not controlled by percolation flow in the same way as pour over. Grind, steep time, agitation, temperature, filtration, and sediment all influence the result.
If 1:16 feels too dense but the flavor is otherwise coherent, try 1:16.5 or 1:17 before making several extraction changes.
If the coffee is weak and hollow, a stronger ratio may help, but so may a finer grind or longer effective contact. Decide first whether you are missing concentration or extraction.
How should moka pot ratio be handled?
Moka pots do not fit neatly into the same ratio workflow.
The basket volume and lower chamber largely define the practical dose and water capacity. A more repeatable approach is to use the pot as designed: fill the basket level without tamping, keep water at the manufacturer-appropriate level, and control grind and heat.
For moka pot, pay more attention to:
- basket fill
- grind
- water level
- starting water temperature
- stove heat
- flow behavior
- when the extraction is stopped
Trying to force every moka pot into a 1:16 formula creates false precision.
What espresso ratio should you use for Fine Robusta?
Start near a 1:2 beverage ratio, then adjust yield by taste.
For example:
18 g dry dose → 36 g espresso.
Fine Robusta can produce substantial body and crema, but neither characteristic determines the ideal yield.
If 18 g in and 36 g out is dense and harsh, try a longer beverage yield such as 40–42 g while holding the dose stable. If the shot becomes thin or loses the structure you want, move shorter again.
Then use grind to recover the flow and extraction behavior you want.
Do not assume that increasingly fine grind always improves espresso extraction. Cameron and colleagues showed experimentally that very fine grinding can promote inhomogeneous flow through the coffee bed. At sufficiently fine settings in their system, extraction yield fell again and reproducibility suffered.
For espresso, a slightly coarser and more repeatable shot can be better than a slow shot that channels.
What about cold-brew ratios?
Cold brew is especially difficult to reduce to one ratio because “cold brew” may mean a ready-to-drink beverage or a concentrate intended for dilution.
OCC therefore treats 1:15 ready to drink and 1:6–1:10 concentrate only as experimental starting zones, not standards.
A peer-reviewed 2022 study comparing Arabica and Robusta cold brews found that species had a larger influence on the tested beverages than the two brewing-condition combinations used in the experiment. Robusta samples showed greater dominance of bitterness and astringent sensation, while all tested beverages received similar preference scores.
That result is useful because it shows why ratio cannot be prescribed in isolation. Species, particle size, temperature, time, chemistry, and sensory preference interact.
For cold brew, decide first whether you want concentrate or ready-to-drink strength, then keep the coffee, grind, water, and steep conditions stable while changing ratio.
How do you know whether to change ratio or grind?
Ask whether the main problem is concentration or flavor balance.

This table is diagnostic, not absolute. The purpose is to avoid random changes.
Does roast level change the useful ratio?
It can change the ratio you prefer, but roast and ratio solve different problems.
Frost and colleagues found that roast level interacts with brew strength and extraction to change sensory perception. That is more defensible than saying every dark roast needs more water or every light roast needs less.
If a more developed Fine Robusta tastes clean but overwhelmingly roasty at 1:16, test 1:16.5 or 1:17.
If a lighter roast tastes thin at 1:16, do not immediately move to 1:14. It may need more extraction through grind, heat, or contact time rather than simply greater concentration.
Use roast level to form a hypothesis, not a rule.
Does processing change the best ratio?
Processing can change the sensory character of a coffee and therefore the concentration a brewer prefers. It does not produce a universal ratio formula.
A natural, washed, honey, or fermented Canephora can respond differently because the coffee itself is different. But roast, storage, green quality, and brewing system remain important.
Statements such as “natural Robusta must use 1:17” would go beyond the evidence.
A more useful procedure is to start at the same 1:16 baseline, taste, then decide whether the coffee needs a different concentration or a different extraction.
A three-cup ratio test
The fastest way to learn the strength preference of a new Fine Robusta is to compare ratios while holding the other variables stable.
Brew three small samples at:
- 1:15
- 1:16
- 1:17
Use the same coffee, grinder setting, water, temperature, and method as closely as possible.
Taste them side by side as they cool.
Do not ask only which one is strongest. Ask which one gives the best balance of body, sweetness, clarity, finish, and bitterness for the purpose you want.
Once you choose the concentration you prefer, use grind and other extraction variables to improve that recipe.
That sequence is easier to learn from than changing ratio and grind simultaneously.
