Do not conclude: that every persistent bitterness is over-extraction. Roast character, coffee composition and concentration also contribute.
Symptom: bitter but not drying
Bitterness without roughness requires context. Is the cup otherwise sweet, aromatic and rounded? If so, bitterness may be integrated into the intended Fine Robusta profile. The right action may be no action.
