A Fine Robusta Recipe Card Standard for Repeatable Dial-In
A practical recipe-card standard for cafés, trainers and serious brewers that records the variables, sensory target and change history needed to reproduce Fine Robusta.
A coffee recipe card is not a decorative list of grams and seconds. It is a controlled handoff between the person who approved a coffee and the person who must reproduce it later. For Cambodian Fine Robusta, a useful card also protects identity: it records the lot information available, the intended sensory expression and the service application instead of reducing the coffee to a generic “Robusta setting.”
The standard below is deliberately practical. It can live on paper, in a shared document or inside a café operations platform. It does not certify coffee, replace sensory training or guarantee identical cups. Its job is to make changes visible, decisions attributable and dial-in waste easier to investigate.

Why most recipe cards fail
A card fails when it records an outcome without recording the conditions that produced it. “18 in, 36 out, 28 seconds” is not enough if the grinder, basket, water, roast age, temperature, puck routine and intended drink are unknown. It also fails when every barista can edit the master with no date, reason or approver.
Another failure is false precision. A card may show decimal places the equipment cannot reproduce while omitting the sensory tolerance that actually matters. Precision is useful only when measurement and workflow support it.
Finally, a recipe can be technically repeatable but commercially wrong. A straight espresso approved for aromatic clarity may become harsh or disappear in a large milk drink. The application belongs on the card.
The minimum viable Fine Robusta recipe card
1. Coffee identity
Record exactly what the supplier provides:
- coffee name and internal stock code;
- species or marketed coffee type as documented;
- country and more specific origin only when verified;
- producer, community, station or exporter when supplied;
- process description when supplied;
- roast date and batch or lot identifier when available;
- date opened;
- supplier contact or specification reference.
Use “not supplied” or “unknown” when evidence is absent. Never fill a blank with a regional assumption. “Cambodian Fine Robusta” should indicate an evidence-backed origin and quality-differentiated identity, not a flavor stereotype.
2. Equipment and environment
Record the grinder model and unit identifier, brewer or machine, basket or filter, water source or treatment profile, and relevant temperature setting. Add the station if a café has machines that behave differently.
Ambient humidity can affect grinder behavior, but a recipe card does not need to become a weather station. If the team observes meaningful daypart drift, record the operational period or a simple environmental note consistently.
3. Recipe inputs and outputs
For espresso, include dose, target beverage mass, permitted output range, temperature setting, pre-infusion setting if used, and target time as a diagnostic range rather than a flavor verdict. Record the distribution and tamp procedure in the linked SOP.
For filter, include dose, water input, grind reference, water temperature, bloom amount and duration if used, pour sequence, agitation instruction, total target time and final beverage or retained-water observation when relevant.
A grinder number has meaning only on the named grinder. Avoid publishing it as if settings transfer across models.
4. Sensory target
Write a short target in ordinary language. Include:
- intended strength and body;
- two or three supported aroma or flavor anchors;
- desired balance among sweetness, acidity and bitterness;
- finish and aftertaste;
- unacceptable preparation faults;
- service temperature or tasting stage;
- intended menu application.
A good target might describe rounded body, clear cocoa and spice, integrated bitterness, present sweetness and a clean persistent finish. It must come from the actual approved coffee. Do not copy notes from another lot.
5. Adjustment rule
Tell the operator what to do when the cup falls outside tolerance. Examples:
- if output is within range but the cup is too concentrated, evaluate a modest yield extension before changing dose;
- if flow is fast and the cup is thin and sharp, move the grind finer by the team’s smallest practical increment;
- if flow is slow and the finish is drying, verify puck preparation, then consider a coarser setting;
- if repeated shots disagree, stop adjusting and investigate distribution, grinder retention or equipment.
The rule should identify one next action, not offer five simultaneous options.
6. Approval and version control
Every master card needs a version number, effective date, approver, last validation date and reason for change. Retain the previous version long enough to investigate a regression.
Temporary shift adjustments belong in a log. They should not silently rewrite the approved baseline.
Separate target, tolerance and trigger
These three terms prevent unnecessary chasing.
Target is the preferred value or sensory result. Tolerance is the acceptable operating range. Trigger is the condition that requires action.
Suppose a beverage output lands slightly away from target but tastes correct and sits within the documented tolerance. No change is required. If the operator adjusts anyway, the next cup may move farther away and consume more coffee. The trigger might instead be two consecutive outputs outside tolerance, or one cup with a severe sensory fault after preparation checks.
Tolerance must be established on the actual equipment and coffee. This article does not invent universal gram, time or temperature limits.
Build the card through an approval flight
Stage one: supplier baseline
Begin with the roaster or supplier’s brew recommendation, roast-rest guidance and sensory description. Mark each as supplied information, not independently verified fact.
Stage two: controlled trials
Use one station, one trained brewer and one tasting group appropriate to the business. Hold dose and equipment constant while testing purposeful changes. Record every trial, including rejected versions, on a temporary worksheet.

Stage three: application check
Taste the candidate recipe in the form customers will receive. For a milk beverage, use the actual milk type, cup and service proportions. For iced service, evaluate dilution and temperature. For batch brew, taste near the beginning and end of the approved holding period.
Do not claim that one espresso recipe is optimal for every application.
Stage four: repeatability check
Ask a second trained operator to follow the card without verbal coaching. If the result fails, the card may be incomplete even if the original brewer succeeds. Revise ambiguous instructions.
Stage five: release

A readable card layout
Keep the live card to one page or one screen. Put identity and version at the top, recipe and tolerances in the center, sensory target and adjustment rules below, and links to detailed SOPs at the end.
A separate change log can hold trial history:

The table is a field design, not a sample dataset. Teams must enter measured values rather than copy placeholders.
Use checkboxes sparingly. “Machine warm,” “basket dry” and “water verified” can be useful start-of-shift checks; twenty boxes encourage automatic completion without observation.
Shift handoff and recalibration
At handoff, the outgoing barista should state the active card version, current grinder position, last acceptable sensory check and any temporary adjustment. The incoming barista should verify with a controlled beverage, not assume the previous setting is wrong.
Recalibration triggers may include a new roast batch, changed water treatment, grinder service, major environmental shift, or repeated results outside tolerance. A time on the clock can prompt a check, but should not force an adjustment when the beverage remains acceptable.

Training with the card
Trainers should teach the causal logic behind each field. A novice who only memorizes “finer when fast” may miss channeling, an incorrect dose or a wet basket. Ask trainees to predict what a single change will do, make the brew, then compare prediction with result.
Use contrast tasting in small portions. Present an approved cup beside one deliberately altered cup, while keeping the exercise safe and the caffeine load considered. The lesson is recognition, not endurance.
The sensory target should avoid prejudice. “No Robusta bitterness” is inappropriate because it treats species identity as a defect. “No harsh, drying finish that obscures the specified aromatic profile” is observable and relevant.
Digital implementation and data boundaries
A spreadsheet or operations platform can flag missing fields, track versions and summarize waste reasons. It cannot determine whether a cup tastes correct without human evaluation. Do not turn an internal recipe into a claim of certification.
Limit personal data. Operator initials may be enough; a public performance leaderboard can discourage honest reporting. The goal is process learning, not blame.
Where suppliers provide confidential specifications, control access and publish only approved origin claims. Recipe data and origin evidence have different owners and retention needs.
Fine Robusta identity on the card
OCC Phase 1 centers Fine Robusta. The card should make that identity specific by preserving verified Cambodian origin details, the actual sensory brief and the roast’s intended application. It should not manufacture a score, certification or producer story.
CQI’s training infrastructure recognizes dedicated Q Robusta grading protocols. Brewing approval is a separate operational activity. A successful café recipe does not itself establish a green-coffee grade, and a quality designation does not guarantee one brewing recipe.
Factual boundaries
Coffee extraction studies can clarify relationships among ratio, particle size, flow, temperature, strength and sensory response. They do not provide a universal card tolerance for every espresso machine or Fine Robusta lot. Each business must validate ranges using its own equipment and intended service.
The current Reddit debate usefully highlights competing habits—grind first, yield first, temperature changes, rest and one-variable adjustment. It remains anecdotal and should not be written into an SOP as proof.
Faq
Is shot time mandatory on an espresso card?
It is highly useful as a diagnostic observation, but taste and measured output remain central. Time alone does not certify quality.
Who may change the master recipe?
The business should name an authorized role. Shift adjustments can be logged without overwriting the approved card.
Should each menu drink have a different card?
Use one extraction card plus application specifications when the base is shared. Create separate versions when preparation genuinely differs.
How often should a card be reviewed?
Use defined triggers such as a new batch, equipment or water change, and repeated drift. No universal calendar fits every café.
Can the recipe card prove Fine Robusta quality?
No. It documents preparation. Origin and quality claims require their own evidence and evaluation.
